PFF: Pumpkin Pie Smoothie

What to do with a leftover can of pumpkin?  Well, if you’re lazy and don’t want to make pie, like me, you can make a pumpkin pie smoothie!

I searched high and low on Pinterest for a recipe without banana as I didn’t have one and decided to make my own.  I also didn’t have pumpkin pie spice, so there’s that.

Pumpkin Pie Spice

We use so many spices and in such quantities in our cooking, that it seems a shame to keep such a one trick pony.  So while I don’t have PPS, I did have cinnamon, ginger, nutmeg, cloves and allspice and that’s exactly the same thing!  You can scale this recipe up if you tend to use more PPS.

  • 2 t cinnamon
  • 1 t ginger
  • 1/2 t each: nutmeg, allspice, cloves

If you’re making a large batch, be sure to mix thoroughly.

Pumpkin Pie Smoothie (Serves 4)

  • 1 can pumpkin puree
  • 2 can coconut milk
  • 4 1/2 t pumpkin pie spice
  • 1 t sweetener of your choice, I used 1 t of sugar-free caramel syrup
  1.  In a blender, add the can of pumpkin puree, the coconut milk and the pumpkin pie spice.
  2.  Blend until smooth, you can add ice as well, but I prefer mine a little less cold!

This recipe gives about 4 servings.  I didn’t want to make these all at once, so I used a mason jar to store the second half for the next day.  I added everything into the jar and poured it into the blender when ready.  It was super easy.

If you want to make it more of a meal, be sure to add the protein powder of your choice.

This was a Pinterest find in that I found what I needed to make something I wanted.  I enjoyed this recipe and think I may make it regularly.
